Description:

This interactive conference explores a key question:
What skills are truly needed to lead sustainability transformation today?

Hosted as a Fishbowl conversation, the session brings together EHL leadership, industry leaders, faculty, and students in an open and participatory dialogue. The fishbowl format redistributes speaking power between guests and the audience, inviting participants to step into the circle, share perspectives, and actively shape the discussion.

Speakers & Participants

  • EHL Leadership – Juan-Francisco Perellon, Chief Academic Officer at EHL
  • EHL Faculty – Cédric Poretti, Associate Dean of the undergraduate programs at EHL
  • Industry leader – Pierre-Henri Perrin, General Manager at Geneva Marriot Hotel
  • Industry leader - Aurelia Figueroa, Chief Sustainability Officer at Breitling
  • Student Body Representative – a member of EHL Sustainability Committee

The conversation will be facilitated by the Sustainability Committee and TransformactionLab.

What to Expect

  • A dynamic discussion on the mindsets, skills, and inner capacities required to drive sustainability change
  • Interactive breaks allowing participants to experience some of these skills directly, through short practices such as breathing exercises, reflection prompts, or peer-to-peer questions
  • Opportunities for students to share feedback on how they experience sustainability at EHL and how they see it reflected in the curriculum

These moments of pause and interaction are designed to help participants directly practice Inner Development Goals (IDGs)— such as self-awareness, empathy, and collaboration—essential capabilities for sustainability leadership.

The conference will be followed by an apéritif, offering space to continue the conversation informally.

Description:

the more sustainability trainings you complete, the more free coffee you earn.

How It Works

Understanding the Impact of What We Eat

During Sustainability Week, the EHL community will find a Beelong Ecoscore displayed on every menu in each food outlet on campus. This score, calculated by Beelong, helps make the environmental and social impact of food choices more visible and easier to understand.

What Is Beelong?

Beelong is a Swiss-based organization that evaluates food products and menus based on their environmental and social impact. Their methodology considers multiple criteria, including:

  • Carbon footprint
  • Biodiversity impact
  • Animal welfare
  • Resource use
  • Social and supply-chain considerations

The result is a clear and accessible ecoscore, designed to support more informed and responsible food choices.

Why It Matters

Food plays a major role in sustainability. By making impact data visible at the point of choice, the Beelong Ecoscore:

  • Encourages awareness rather than judgment
  • Supports better-informed decisions
  • Helps translate complex sustainability data into everyday actions

At EHL, the goal is not to dictate what people should eat, but to provide transparency, raise awareness, and encourage dialogue around the sustainability of food systems.

Throughout the week, take a moment to explore the ecoscores, ask questions, and reflect on how small choices can contribute to broader impact.

From Student Uniforms to Upcycled Fashion

Since 2019, EHL has been partnering with Démarche, a Swiss social enterprise that supports professional reintegration through training and meaningful work. This collaboration is best known through the Hotel Restaurant L’Union, where EHL regularly sends chefs to train Démarche beneficiaries.

Beyond hospitality, the partnership also extends to textiles and fashion.

Giving Uniforms a Second Life

Rather than discarding old and used student uniforms, EHL donates them to Démarche. These textiles are then upcycled into unique fashion pieces, combining craftsmanship, creativity, and social impact. Each item tells a story of reuse, inclusion, and circular economy.

During Sustainability Week, the new Démarche fashion collection created from EHL student uniforms will be showcased on the balcony next to the Committee Space.

The pieces presented will be available for purchase at Ateapic, Démarche’s shop in Lausanne.

This initiative highlights how collaboration, reuse, and social entrepreneurship can transform everyday materials into meaningful, sustainable creations.

Description:

Shaping the Next Chapter of EHL’s Sustainability Journey

2025 marks an important milestone in EHL’s sustainability journey. As several of our previous commitments reached completion, we took the opportunity to rethink and strengthen our sustainability strategy.

To do so, EHL conducted a new materiality assessment, engaging both internal and external stakeholders to better understand today’s most relevant environmental, social, and governance priorities. The results of this assessment directly informed the development of new sustainability pillars, commitments, and objectives, designed to guide EHL’s actions in the years ahead.

This updated strategy builds on past progress while responding to evolving expectations, challenges, and opportunities — ensuring that sustainability remains a core part of EHL’s mission and operations.

Our Three Strategic Axes

The renewed strategy is structured around three complementary axes:

Lead by Example
EHL commits to reducing its environmental footprint and strengthening responsible practices across campus operations, governance, and daily activities — demonstrating that sustainability starts at home.

Transform Through Education & Engagement
Sustainability is embedded in learning, teaching, and campus life. Through education, training, and engagement initiatives, EHL equips students, staff, and faculty with the knowledge, skills, and mindsets needed to drive positive change.

Inspire the Industry
As a hospitality and service management school, EHL aims to share its experience, partnerships, and learnings beyond campus — contributing to broader transformation within the industry.

Discover, Ask, Contribute

During Sustainability Week, you are invited to:

  • Discover the new sustainability pillars and commitments at the Sustainability Pod
  • Ask questions directly to the Sustainability Team during their daily presence
  • Share feedback, ideas, and expectations for the future

Sustainability is a collective journey. Come explore what’s next — and be part of shaping the path forward.

Description:

Learning Together, Across Cultures

Since 2014, EHL has been partnering with the École Hôtelière Paul Dubrule, a leading hospitality school in Siem Reap, Cambodia. This long-term collaboration is built on mutual learning, knowledge sharing, and shared values.

Sharing Skills, Building Bridges

Each year, EHL professors travel to Paul Dubrule to share best practices, teaching methods, and professional expertise. In return, EHL gains valuable perspectives rooted in different cultural, social, and educational contexts.

In 2025, the partnership took a new step forward with the launch of a Student Buddy Program. Students from both schools are paired to exchange on:

  • Academic journeys and career aspirations
  • Cultural perspectives
  • Daily life, hospitality, and personal experiences

A simple idea with a powerful impact: learning from each other, beyond classrooms and borders.

Discover the Partnership During Sustainability Week

During Sustainability Week, learn more about the EHL × Paul Dubrule partnership and the Student Buddy Program through a dedicated exhibition on the Gallery next to the Sustainability Pod.

Stop by, get inspired, and discover how education, exchange, and human connection can create lasting impact — one conversation at a time.

Come explore, connect, and learn more.
